This dutch holiday cake is often enjoyed during special occasions in the Netherlands.
Its rich and buttery filled with dried fruits and nuts with warm spices.
Ingredients:
200 g all purpose flour
100 g butter softened
100 g brown sugar
2 eggs
1 ts vanilla extract
1 ts cinnamon
½ ts nutmeg
½ ts baking powder
100 g mixed dried fruits (raisins, currants, chopped apricots)
50 g chopped almonds or walnuts
2 tbs milk
Instructions:
Line a round cake pan with parchment paper and preheat oven to 175c, cream together the butter and brown sugar until smooth, add eggs one by one then add vanilla.
Mix the flour cinnamon nutmeg and the baking powder and fold the dry ingredients into the wet mixture until smooth.
Add the mix of fruits and the nuts and stir them evenly.
If the batter is too thick add milk.
Pour the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool before slicing.
