Ingredients:
250 g grated carrots
200 g sugar
3 eggs
150 ml vegetable oil
200 g flour
1 ts baking powder
1 ts cinnamon
pinch of salt
100 g cream cheese
2 tbs sugar (for the cream cheese )
1 ts vanilla extract
Instructions:
1 Preheat the oven to 180C and grease a round or square baking pan
2 In a large bowl whisk eggs with sugar until light and fluffy then gradually add the oil and mix well
3 Fold in the grated carrots, flour, baking powder, cinnamon, and salt until evenly combined
4 In a small bowl mix cream cheese with sugar and vanilla until smooth
5 Pour half of the cake batter into the pan then drop spoonfuls of the cream cheese mixture on top and swirl lightly with a knife before adding the rest of the batter
6 Bake for 35–40 minutes until the cake is golden and a skewer comes out clean
7 Let it cool slightly before serving
